Hibiki's House Matcha is an excellent value. The tea is a wonderful green colour. It's ground really well, and very fresh. I highly recommend it. I have tried the whole range of Hibiki teas. Lately, I have been studying food science. The chloroplasts that give matcha it's green colour are quite incredible. When viewed under a microscope, they move around the cell by cytoplasmic streaming (like a river) and are a wonderful colour. These chloroplasts are what convert sunlight into sugar, for the cell. We think that chloroplasts have been on earth for several billion years.  |
