Review	This matcha is quite modest, even in its title, which is simply, Organic Matcha. In recent times, it might be true to say our expectation is that matcha will have a refined, mellow flavour, with little or no astringency. Yet, this matcha has a certain, though not overwhelming, old-fashioned astringency, which brings to its character both humility and simplicity, two essential qualities in the practice of Chado, The Way of Tea.
